The inspiration for our Jamaican Jerk Chicken Salad came fro Seymour’s Jerk Center in, of all places, Grand Cayman B.W.I..Here, the Jerk Chicken is grilled over a low smoky heat and topped with onions that are pickled in a white vinegar that is seasoned with Scotch Bonnet Peppers. The astringent and hot pickled condiment kind of brings relief- but the scotch bonnet then sucker punches you again. It’s a euphoria inducing meal. Grand Cayman has a bad reputation for being a tourist trap but there is a wealth of great eating that the locals get to enjoy. TS
