On the heels of last nights episode of Top Chef-I felt this image apropos-Conch is a essentially a sea snail that mostly gets fried up into a fritter batter…but locals mostly enjoy it marinated in a ceviche-like salad. It’s sweet and tender and this one had a perfectly titrated amount of Scotch Bonnet Pepper. Scoth Bonnet Pepper packs up to 350k scoville heat units. That’s hot considering the Jalapeno maxes out at 5k. We won’t be making this salad at Chop’t but I hope if you find yourself travelling amongst the islands that you give conch a try in it’s salad form. TS
